It is so hard to find the time to make healthy food for our families. These Apricot Coconut Bites will take you 5 minutes, 10 tops to make, and there is no comparison to the store bought ones. Do you know how many ingredients are in the store bought apricot coconut slice? 3 or 4 perhaps?? No, there are 12!!! Apricots make up 30% and coconut only 10%! The remaining ingredients are various additives including sugars, preservatives and colours.
Preservative 220 is a sulphite, and it is in almost everything. It keeps meat and dried fruits looking good. As with everything, sulphites won’t cause problems for everyone, however in some people they can cause asthma attacks, headaches, skin rashes, IBS and behaviour disturbances. Unfortunately preservative 220 is also in wine…so maybe that’s the cause of the headache 😉 Organic wine it is then!
Alternatively these home made apricot coconut balls have two ingredients – organic dried apricots and organic desiccated coconut, and took just 5 minutes to make! Dried apricots are rich in beta-carotene, an antioxidant that may help reduce risk of heart disease and protect from free radical damage. Also high in iron, calcium and selenium. Coconut is a good source of lauric acid (a medium chain fatty acid that the body metabolises into energy), iron, phosphorous and zinc.

- 200gm dried apricots
- 200gm desiccated coconut
- 1tbsp fresh lemon juice
- Add ingredients to a food processor and blitz for 40 seconds, speed 9 in a thermomix or until well ground in a food processor. Scrape down sides.
- With wet hands roll into balls and coat in extra coconut if desired. Otherwise line a slice tin with baking paper and press mixture down with the back of a spoon. Refrigerate for 30 minutes to set, then cut into squares. Makes approx 20. Recipe can be doubled. Store in the refrigerator or freezer.
- All ingredients are organic unless otherwise stated.
