Roasted Carrot Hommus

Roasted Carrot Hommus

Serves: 8
Ingredients
  • 2 roasted carrots
  • 2 cloves garlic
  • 400gm can chickpeas
  • 2 tbsp tahini
  • 2-3 tbsp olive oil
  • juice of 1 lemon
  • 1 tsp cumin
  • salt & pepper to taste
Instructions
  1. Place garlic in a food processor and chop until minced.
  2. Add all other ingredients and blend until desired consistency is achieved. For a smoother consistency you may need the third tbsp of oil or add a little more lemon juice.
  3. You can store this in the refrigerator for up to 4 days. It’s also great as a spread on salad wraps or sandwiches.
