Roasted Carrot Hommus

Ingredients
- 2 roasted carrots
- 2 cloves garlic
- 400gm can chickpeas
- 2 tbsp tahini
- 2-3 tbsp olive oil
- juice of 1 lemon
- 1 tsp cumin
- salt & pepper to taste
Instructions
- Place garlic in a food processor and chop until minced.
- Add all other ingredients and blend until desired consistency is achieved. For a smoother consistency you may need the third tbsp of oil or add a little more lemon juice.
- You can store this in the refrigerator for up to 4 days. It’s also great as a spread on salad wraps or sandwiches.
