- 375g zucchini, finely grated
- 1 large onion, finely chopped
- 3 slices free range bacon, finely chopped
- 1 cup (125g) cheese, grated
- 1 cup (125g) SR flour, (GF SR flour or whole spelt flour with 1tsp baking powder)
- ½ cup coconut oil
- 5 eggs, lightly beaten
- salt & pepper to taste
- Combine all of the ingredients in a large bowl.
- Pour into a well greased or lined lamington tin.
- Bake in a moderate oven for 30 minutes until well browned and set in the centre.
